Summer-Style Chili

This light chili is full of summer vegetables. It’s a very low-calorie, high-fiber chili loaded with vitamins and minerals.

Ingredients

Serves 8

1 medium bulb fennel, diced

4 medium radishes, diced

2 stalks celery, diced, including leaves

2 large carrots, peeled and cut into coin-sized pieces

1 medium onion, peeled and diced

1 medium shallot, peeled and diced

4 cloves garlic, peeled and sliced

1 small habanero pepper, seeded and diced

12 ounces tomato paste

1⁄2 teaspoon dried oregano

1⁄2 teaspoon ground black pepper

1⁄2 teaspoon crushed rosemary

1⁄2 teaspoon cayenne

1⁄2 teaspoon ground chipotle

1 teaspoon chili powder

1 teaspoon tarragon

1⁄4 teaspoon cumin

1⁄4 teaspoon celery seed

2 medium zucchini, cubed

2 medium summer squash, cubed

10 Campari tomatoes, quartered

In a 4-quart slow cooker add all ingredients except zucchini, summer squash, and tomatoes. Stir.

Cook on low for 6–7 hours; then stir in zucchini, summer squash, and tomatoes. Cook on high for an additional 30 minutes. Stir before serving.
